Every morning I take a quick scan of the fridge and pantry to see what we have and which foods look like they need to be used up soon. Veggies can be cooked and frozen or used to make soup or a rice dish to extend their usability life-span. Fruit can also be cooked and added to dishes if they are less than perfect. Obviously, you can use browned bananas to make delicious banana bread, and you can bake berries into muffins, or cook them with a bit of honey or sugar creating a wonderful sauce. I had an apple that had seen better days, but was still fine to eat, so I added it to some oats with spices and a little maple syrup, and it made such a tasty breakfast.
As warmer weather enters the spring and summer season, these cool and slightly sweet overnight oats are a perfect breakfast.

The light chai flavor is delicious with the apples and oats. These are best made with organic rolled oats, and not steel cut or instant oats. Honey could also be substituted for the maple syrup, although the maple flavor is very yummy.
Maple-Apple Chai Overnight Oats

- 2 ½ cups milk/non-dairy milk
- 2 cups rolled oats
- 1 cup diced apples (about 1 medium apple)
- 1 tablespoon maple syrup
- ¼ teaspoon ground nutmeg
- ¼ teaspoon ground cinnamon
- ¼ teaspoon ground cardamom
- Mix all of the ingredients together in a large bowl.
- Place into a large container or four smaller containers – mason jars work great.
- Chill in the refrigerator for at least four hours or overnight.
- Serve cold or at room temperature.
